Sweet Potato & Quinoa Bites

Our family loves Quinoa! It is high in iron, calcium, potassium, B vitamins and all 9 amino acids. It is also high in fiber and protein and is the least allergenic of the grains. I made these Sweet Potato & Quinoa Bites for dumpling's first picnic. It is super easy to make and can be kept in the fridge/freezer for another day.
Mess Level: The Quinoa crumbles and so it can get pretty messy!
Perfect for: A picnic! Where you don't need to pick up baby's mess off the floor.
Ingredients:
- 1 Medium Sweet Potato
- 60g Uncooked Quinoa
- 180ml Water
- 1 tsp Cinnamon
- Rice Bran Oil
Method:
1. Boil Sweet Potato until tender. Mash and put in fridge overnight
2. Cook in Quinoa in pot with water and bring to boil. Simmer until water is completely absorbed. Put in fridge overnight.
3. Add Quinoa and Cinnamon to Mashed Sweet Potato. Add Quinoa slowly to make sure texture doesn't become too crumbly.
4. Roll into balls and place into oiled tray.
5. Bake at 200 degrees for 15 mins. Flip the bites over and bake for another 7 minutes.
Storage:
Bites can be kept in the fridge for 2-3 days or in freezer for 2 months.
