Sugar Free, Allergy Friendly Brownies

Mess Level: Not too messy at all! It doesn't crumble easily. Usually dumpling just drops it whole.

Perfect for: Lunchboxes, on-the-go afternoon snacks, picnics, outdoor dining.


Ingredients:

- 12 Medjool Dates (pitted, roughly chopped)

- 250ml boiling water

- 150g plain flour (or gluten free flour alternative such as almond meal)

- 1 tsp baking powder

- 1/2 tsp baking soda

- 1 tbsp ground flax seed

- 100g cacao powder

- 200ml milk (can use dairy-free alternative like Oat milk)


Method:

1. Preheat the oven to 180c

2. Add dates in the food processor and boiling water and let it soak for 15mins until the dates to soften. Blend dates until it becomes a paste.

3. Add dry ingredients to the food processor and continue to process until it is well combined.

4. Add milk to the mixture and process again until combined.

5. Pour mixture into brownie tin and bake in oven for around 20 mins.

6. Brownie will become fudgier when it has cooled.


Storage: Store in the fridge for up to 5 days or freeze for up to 3 months.
