Egg Free Pea Fritters

We've had some reactions to egg recently, so I'm trying to stay away from egg until we get dumpling tested for allergies. Many pea fritter recipes use eggs, however it works equally well without egg.


Mess Level: It isn't too messy, but it can crumble.

Perfect for: A picnic or outdoor eating


Ingredients:

- 300g Frozen Peas

- 120g Flour

- 1 Onion, finely chopped

- 3 Garlic Cloves, minced

- Rice Bran Oil


Method:

1. Cook frozen peas in boiling water for 5 minutes and set aside

2. Saute onion on medium heat for 4-5 minutes until brown and soft. Add minced garlic and saute for a further 1-2 minutes.

3. Blitz peas, onion, garlic and flour in food processor until it becomes a thick paste.

4. Heat oil in saucepan. Spoon mixture into saucepan and fry until golden brown. Flip onto other side to fry.


Storage:

These can be kept in fridge for up to 3 days or in freezer for 2 months.
