Baby Pizzas

This is a pizza recipe for the whole family. The recipe is super easy and takes only about 10 mins of preparation. My Italian husband highly approves of this pizza. So much so, he doesn't feel we need to order pizza anymore! Sigh.. if only he could learn to make it, then we're all good!


Mess Level: Slightly messy, but manageable. The tomato may come off and that is probably as messy as it gets.

Perfect for: A picnic or outdoor meal


Ingredients:

- 120g Greek Yogurt

- 60g Self Raising Flour (or Plain flour + 2tsp baking powder)

- Olive Oil

- Mozzarella

- Sliced Tomatos

- Basil


Method:

1. Mix yogurt and flour in a bowl until it forms a ball. Knead it on a floured surface until soft and not sticky.

2. Roll dough until thin with a rolling pin.

3. Place on a baking sheet and brush dough with a bit of olive oil

4. Scatter toppings and bake until browned and bubbling for 12-15 mins at 220 degrees.

5. Let it cool and cut into fingers or triangles. Fingers are easier for 6 month old to hold


Storage:

Pizzas can be stored in the freezer for up to 2 months. It can be heated in the oven from frozen. Just put it in at 200 degrees for 15mins or so.
