Baby Friendly Cinnamon Rolls

I first discovered Cinnamon Rolls in Canada when I was 18. I was in Toronto for various ice-skating competitions. I fell in love with taste and smell of Cinnamon. We basically had a Cinnabon a day for additional sustenance!


This recipe is a super easy, sugar free version of Cinnamon Rolls. In my opinion, it tastes pretty close to the real thing (not as sweet though). It is perfect for babies, toddlers, kids and adults for breakfast or an afternoon snack.

Ingredients:

- 200g Plain Greek Yogurt

- 200g Self Raising Flour

- 2 tsp Baking Powder

- 50g Unsalted Butter

- 2 tsp Cinnamon

- 100g Dates, pitted and roughly chopped

- Water


Method:

1. Place chopped dates in a saucepan and add enough water to cover. Gently heat and stir until dates have dissolved into a smooth paste. You may need to continue to add water.

2. Melt butter and cinnamon together. Add dates paste to the butter and cinnamon mixture.

3. Combine flour and baking powder into a bowl. Add yogurt to the dry ingredients. Mix in a bowl until it forms a ball. Knead it on a floured surface until soft and not sticky.

4. Roll dough until thin with a rolling pin.

5. Spread cinnamon mixture onto the dough.

6. Roll up the dough and slice to about 2cm thickness

7. Place on greased baking tray or baking paper and bake for 12-14 minutes at 200 degrees until golden brown.


Storage:

Cinnamon Rolls can be stored at room temperature for 2-3 days. It can be kept in the freezer up to 2 months. It can be heated in the oven from frozen. Just put it in at 180 degrees for 10mins or so.
